George goes bananas with a protein muffin!



I’m obsessed with Power Hungry(TM): The Ultimate Energy Bar Cookbook 

by Camilla V. Saulsbury and recently made a version of her “Banana Blondie Protein Pucks” for my son, his best friend Curious George and another friend’s family as a treat during the blizzard of ’14 – kids off an ENTIRE week of school OH MY!

Here is the recipe, which I’ve adapted from her book by adding flax meal, coconut oil and using Juice Plus Complete Vanilla – the best tasting protein blend I’ve tasted to date. Julie – I’m waiting anxiously for an unsweetened version!

1 c plus 1 tbsp almond flour
1/4 c flax meal
1 1/4 c very ripe bananas (I freeze them and just let them defrost)
4 eggs
1 cup lightly packed, quality sweetened vanilla protein powder
1 tsp baking powder
1/4 tsp sea salt
1 tbsp coconut oil, melted
semi-sweet mini chocolate chips for sprinkling

  • Combine all the ingredients in a blender.
  • Divide the batter into 12 muffin cups that have been sprayed with a nonstick cooking spray.
  • Sprinkle in the chocolate chips.
  • Bake at 325 for 20-25 minutes until the edges are golden brown.

  • A friend from the University of Bridgeport made these muffins for her three children and got the thumbs up. She has an issue with using that many eggs in baked goods: she says she’d rather make an omelette and I don’t blame her! She had a few substitutions that worked out well, owing to the forgiveness of this recipe.

    – Replaced the eggs with flax eggs (using flax from great companies such as Bob’s Red Mill that’s been freshly ground), so this ends up using a lot of flax. Good!
    – Substituted the almond flour with half whole wheat, half buckwheat… just because that’s what she had on hand.
    – Substituted the Juice Plus Vanilla Complete with hemp protein, vanilla extract and stevia
