Quick Garlic Crunch Slaw

A friend of mine told me that she found a brussel sprout, broccoli, kale, cabbage slaw blend at Trader Joe’s recently. Well, I make the semi-weekly journey to TJ’s (also known as “Joe’s” and one of my “boyfriends”) and I did NOT see it. Today, however, I found it scrunched between the Power Greens and Organic Spinach. I brought it home and created a lemony, garlicky, dilly salad with it… This would make a nice, healthy covered dish for a barbecue (it’s not Summer yet, is it?) or a hearty base for a Mediterranean Tuna and White Bean salad.

1 Bag Trader Joe’s Cruciferous Crunch (Substitute pre-shredded broccoli slaw)
2 carrots shredded
4 spring onions sliced finely
bunch of fresh dill chopped
bunch of parsley chopped
sea salt and pepper to taste

1/2 avocado
3 tbsp rice vinegar
zest of 1 lemon or peel a few inch chunks of zest off with a knife
juice of the lemon you just zested
4-6 cloves garlic
2 tbsp olive oil

  • Place the Cruciferous Crunch in a microwave safe bowl and heat for 1 minute 15 seconds, just until warmed and begin steaming OR place in a steamer basket and steam for 3-4 minutes.
  • Meanwhile combine the dressing ingredients in a blender or mini-processor.
  • Combine the dressing and remaining ingredients with the steamed slaw. Garlicky goodness.
  • Refrigerate for up to 3 days, if it lasts that long.

  • this sounds great..thanks for passing it on!
