3 Oil Free Dressings – 3 Ingredients Each

I visited one of my favorite client offices today, where they’d asked me to do a “demo” of something healthy. Channeling my Grandmother’s wonderful ability to demonstrate food and chat up a crowd, I brought a few of my favorite tools and ingredients to build a dressing. Every evening we eat at home, there is a salad; if it’s not the main course it’s still there. Sometimes there is just a bottle of olive oil and a bottle of balsamic, but sometimes I get really fancy.

How much will you pay me (I take all major credit cards AND PayPal!) if you head to your fridge and find a partially used, if not almost completely empty squeeze bottle or jar of mustard in there? If so, I have some great news for you. There might be an introduction to some new, but highly recommended ingredients headed your way. Below are three recipes for oil-free dressings you can make in a snap (if you have the ingredients), with only 3 ingredients each. Now, I have nothing against fats – especially healthy ones that you might add to your salad in the form of olive oil. But without dousing your greens in bottled dressing or dressing made with olive oil, you are free to experiment with your plate in the form of avocado, various nuts, seeds, eggs, fish, cheeses, etc… and not break your caloric bank for the day.

3 oil free dressings

 

Yogurt Ranch

1 tsp Fresh or dried dill

1 tsp Penzey’s Buttermilk Dressing and Dip Mix 

1 cup Kefir (a fantastic probiotic found in the dairy section or natural foods section of most grocery stores)

Whisk together all the ingredients in a bowl OR jam jar or bottle with a tight-fitting lid, then shake vigorously. Allow to combine for at least 30-40 minutes before serving. These measurements are “to taste”, so experiment with how much dill, mix and kefir you like. It also depends upon how much you’d like to make. For example, if you want to put the dressing in a little leftover spice jar (the dill jar, for example that’s almost empty) you won’t need a full cup of kefir. Use your noggin’.

Creamy Sweet Mustard

1 bottle of almost empty mustard

1 tbsp agave nectar, maple syrup or honey

1/2-1 cup Kefir

Add the agave, syrup or honey and the kefir to the mustard bottle. Shake vigorously (the bottle.) Taste and adjust to your preferences.

Balsamic

1 bottle of almost empty mustard

1 tbsp agave nectar, maple syrup or honey

1/3 cup Balsamic vinegar

Add the agave, syrup or honey and the balsamic to the mustard bottle. Shake vigorously (the bottle.) Taste and adjust to your preferences.
